Ingredients
4 cups (500g) all-purpose flour
2 large eggs
1/4 cup (60ml) vegetable oil
1/2 cup (120ml) warm water
1 tsp salt
400g semi-hard white cheese (queso blanco), cut into strips
Oil for frying
Directions
1. In a large bowl, combine the all-purpose flour and salt.
2. Make a well in the center of the flour mixture and add the eggs and vegetable oil.
3. Gradually pour in the warm water while mixing, until the dough comes together.
4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
5. Cover the dough with a cloth and let it rest for 30 minutes.
6. Roll out the dough into a thin sheet about 1/8 inch thick.
7. Cut the dough into long strips about 1 inch wide.
8. Take a strip of cheese and wrap it tightly with a dough strip, making sure the cheese is completely enclosed to prevent it from leaking during frying.
9. Heat oil in a deep frying pan over medium-high heat.
10. Fry the tequeños in batches until golden brown, about 3-4 minutes each.
11. Remove them from the oil and place on a paper towel-lined plate to drain excess oil.
12. Serve hot and enjoy!
