Ingredients
3 cups of all-purpose flour
1 cup of granulated sugar
1 cup of brown sugar
1 cup of vegetable oil
4 large eggs
1 cup of milk
2 tsps of baking powder
1 tsp of baking soda
1 tsp of vanilla extract
1/2 tsp of salt
1 cup of raisins
1 cup of mixed candied fruits
1/2 cup of chopped nuts (optional)
Directions
1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3. In another bowl, beat the eggs until they are light and fluffy, then add the granulated sugar, brown sugar, and vegetable oil. Continue to beat until well combined.
4. Gradually add the milk and vanilla extract to the egg and sugar mixture, mixing well.
5. Mix in the dry ingredients gradually, blending until just combined.
6. Fold in the raisins, mixed candied fruits, and chopped nuts if using.
7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
8. Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
9. Let the bread cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
