Ingredients
2 cups lettuce, chopped
1 cup cherry tomatoes, halved
1/2 cup cucumber, sliced
1/2 cup red bell pepper, diced
1/4 cup red onion, thinly sliced
1/4 cup black olives, sliced
1/4 cup feta cheese, crumbled (optional)
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp salt
1/2 tsp black pepper
1 tsp dried oregano
Directions
1. In a large bowl, add 2 cups of chopped lettuce.
2. Add 1 cup of halved cherry tomatoes to the bowl.
3. Add 1/2 cup of sliced cucumber to the mix.
4. Add 1/2 cup of diced red bell pepper.
5. Add 1/4 cup of thinly sliced red onion.
6. Add 1/4 cup of sliced black olives.
7. If using, sprinkle 1/4 cup of crumbled feta cheese on top.
8. In a small bowl, combine 2 tablespoons of olive oil and 1 tablespoon of balsamic vinegar.
9. Add 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of dried oregano to the dressing.
10. Whisk the dressing until well combined.
11. Pour the dressing over the salad.
12. Toss the salad gently to combine all ingredients evenly.
13. Serve immediately or chill in the refrigerator before serving.
