Ingredients
2 medium sweet potatoes
1 small onion
6 large eggs
1/4 cup olive oil
Salt, to taste
Black pepper, to taste
Directions
1. Peel and slice the sweet potatoes into thin rounds.
2. Peel and finely chop the onion.
3. Heat the olive oil in a large skillet over medium heat.
4. Add the sweet potatoes and cook for about 10 minutes, flipping occasionally, until they start to soften.
5. Add the chopped onion to the skillet and cook for another 5-7 minutes until both the sweet potatoes and onion are tender.
6. In a large bowl, beat the eggs and season with salt and black pepper to taste.
7. Reduce the heat to low, pour the beaten eggs over the sweet potatoes and onions, and gently stir to combine.
8. Cook without stirring for about 10-12 minutes, or until the edges start to set.
9. Carefully place a large plate over the skillet and flip the tortilla onto the plate.
10. Slide the tortilla back into the skillet, cooked side up, and cook for another 5-7 minutes until fully set.
11. Remove from heat and let it cool slightly before slicing and serving.
