Ingredients
1 cup quinoa
2 cups water
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
2 large eggs, beaten
1/4 cup finely chopped onion
2 tbsp olive oil for frying
Directions
1. Rinse the quinoa under cold water.
2. In a medium saucepan, bring 2 cups of water to a boil.
3. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes until the water is absorbed and the quinoa is tender.
4. Remove the saucepan from heat and let the quinoa cool slightly.
5. In a large mixing bowl, combine the cooked quinoa, breadcrumbs, grated Parmesan cheese, chopped fresh parsley, minced garlic, salt, black pepper, beaten eggs, and finely chopped onion. Mix well until all ingredients are fully incorporated.
6. With your hands, form the mixture into small croquettes or patties.
7. Heat the olive oil in a large skillet over medium heat.
8. Carefully place the croquettes in the skillet and cook for about 4-5 minutes on each side, until they are golden brown and crispy.
9. Transfer the croquettes to a paper towel-lined plate to drain any excess oil.
10. Serve warm.
