Ingredients
1 pizza dough
2 cups of fresh spinach
1 cup of shredded mozzarella cheese
1/2 cup of ricotta cheese
2 eggs
1/4 cup of grated Parmesan cheese
2 cloves of garlic, minced
1 tbsp of olive oil
Salt and pepper to taste
Directions
1. Preheat your oven to 475°F (245°C).
2. Roll out the pizza dough on a floured surface until you get your desired thickness. Transfer it to a baking sheet or pizza stone.
3. Heat the olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
4. Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste, then remove from heat and set aside.
5. Spread the ricotta cheese evenly over the pizza dough.
6. Sprinkle the shredded mozzarella cheese over the ricotta layer.
7. Evenly distribute the sautéed spinach and garlic mixture over the cheese.
8. Create two small wells in the spinach and cheese topping. Crack an egg into each well.
9. Sprinkle the grated Parmesan cheese over the top.
10. Bake the pizza in the preheated oven for 10-12 minutes, or until the edges are golden brown and the eggs are set to your liking.
11. Remove from the oven and let it cool for a minute before slicing and serving.
