Ingredients
2 cups cooked chicken, shredded
1 cup pineapple chunks
1/2 cup celery, chopped
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup mayonnaise
2 tbsp plain Greek yogurt
1 tbsp lemon juice
1 tsp salt
1/2 tsp black pepper
1/4 cup fresh cilantro, chopped (optional)
Directions
1. In a large mixing bowl, combine the shredded cooked chicken, pineapple chunks, chopped celery, diced red bell pepper, and finely chopped red onion.
2. In a small bowl, mix together the mayonnaise, plain Greek yogurt, lemon juice, salt, and black pepper until well combined.
3. Pour the dressing over the chicken and pineapple mixture.
4. Gently toss everything together until all ingredients are evenly coated with the dressing.
5. If using, add the chopped fresh cilantro and give it a final toss.
6. Refrigerate the salad for at least 30 minutes to let the flavors meld together.
7. Serve chilled and enjoy!
