Peach jam, Homemade: homemade recipe

Ingredients

4 cups peaches, peeled and mashed
2 cups granulated sugar
2 tbsp lemon juice
1 packet (1.75 ounces) powdered fruit pectin
1/2 tsp butter (optional, to reduce foaming)

Directions

1. Start by thoroughly washing the peaches. Peel them and remove the pits. Mash the peeled peaches until you have 4 cups of mashed fruit.
2. In a large pot, combine the mashed peaches, lemon juice, and powdered fruit pectin. Stir well to ensure the pectin is evenly distributed.
3. Place the pot over medium-high heat. Stir constantly until the mixture comes to a full rolling boil.
4. Add the granulated sugar all at once, stirring to dissolve completely. If using, add the 1/2 teaspoon of butter to reduce foaming.
5. Return the mixture to a full rolling boil. Boil for 1-2 minutes, stirring constantly.
6. Remove the pot from heat. Skim off any foam that may have formed on the surface.
7. Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top.
8. Wipe the rims of the jars with a clean, damp cloth, then place the lids on the jars.
9. Process the jars in a boiling water bath for 10 minutes to seal.
10. Allow the jars to cool completely before storing. Check the seals to ensure they are tight. Store in a cool, dark place.
