Ingredients
2 cups cherry tomatoes, halved
1 large cucumber, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1/2 red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 garlic clove, minced
Directions
1. In a large mixing bowl, combine the cherry tomatoes, cucumber, red bell pepper, yellow bell pepper, and red onion.
2. Add the fresh parsley to the bowl with the vegetables.
3. In a small bowl, whisk together the olive oil, red wine vinegar, smoked paprika, salt, black pepper, and minced garlic.
4. Pour the dressing over the vegetables in the large mixing bowl.
5. Toss everything together until the vegetables are evenly coated with the dressing.
6. Serve the salad immediately, or let it sit in the refrigerator for 30 minutes to allow the flavors to meld together.
