Orange Pork Loin: homemade recipe

Ingredients

1 (2 to 3 pound) pork loin
1 cup orange juice
1/2 cup brown sugar
1/4 cup soy sauce
2 cloves garlic, minced
1 tbsp Dijon mustard
1/2 tsp ground ginger
1/4 tsp black pepper
1 tbsp olive oil
1 orange, sliced thin
1 tbsp cornstarch (optional, for thickening sauce)
1/4 cup water (optional, for thickening sauce)

Directions

1. Preheat your oven to 350°F (175°C).

2. In a bowl, combine the orange juice, brown sugar, soy sauce, minced garlic, Dijon mustard, ground ginger, and black pepper. Mix well.

3. Heat the olive oil in a large skillet over medium-high heat. Sear the pork loin on all sides until browned, about 2-3 minutes per side.

4. Place the seared pork loin in a baking dish. Pour the orange juice mixture over the pork, making sure it’s well coated.

5. Arrange the orange slices around and on top of the pork loin.

6. Cover the baking dish with aluminum foil and bake for 1 to 1.5 hours, or until the pork reaches an internal temperature of 145°F (63°C).

7. If the sauce is too thin, in a small bowl, mix the cornstarch and water to create a slurry. Remove the pork loin from the baking dish, and pour the sauce into a small saucepan. Stir in the cornstarch slurry and cook over medium heat until thickened, about 2-3 minutes.

8. Let the pork loin rest for about 10 minutes before slicing. Serve with the thickened sauce and the baked orange slices.
