Ingredients
1 cup of guava paste
1 cup of granulated sugar
1/2 cup of unsalted butter, at room temperature
1/4 cup of light brown sugar, packed
1 large egg
1 tsp of vanilla extract
1 1/2 cups of all-purpose flour
1/2 tsp of baking soda
1/4 tsp of salt
Directions
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a bowl, cream together the unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
3. Beat in the egg and vanilla extract until well combined.
4. In another bowl, whisk together the all-purpose flour, baking soda, and salt.
5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
6. Divide the dough into two equal portions. Wrap each portion in plastic wrap and refrigerate for at least 30 minutes.
7. Meanwhile, cut the guava paste into small pieces to make it easier to spread.
8. Roll out one portion of the dough on a lightly floured surface into a rectangle about 1/4 inch thick.
9. Spread half of the guava paste evenly over the dough rectangle.
10. Carefully roll the dough into a log, starting from one of the longer sides.
11. Repeat steps 8-10 with the second portion of dough and the remaining guava paste.
12. Slice each log into 1/2-inch thick slices and place them on the prepared baking sheet.
13. Bake for 10-12 minutes, or until the edges are golden brown.
14. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
