Ingredients
2 lb mussels
2 tbsp olive oil
1 onion, finely chopped
3 cloves garlic, minced
1/2 cup dry white wine
1/2 tsp smoked paprika
1 cup tomato sauce
1/2 cup fish or seafood stock
Salt, to taste
Freshly ground black pepper, to taste
1/4 cup chopped fresh parsley
Directions
1. Clean the mussels thoroughly under cold water, removing any beards and scraping off any barnacles. Discard any mussels that are open and do not close when tapped.
2. Heat the olive oil in a large pot over medium heat.
3. Add the finely chopped onion to the pot, and sauté until it becomes translucent, about 5 minutes.
4. Add the minced garlic to the pot, and sauté for another minute until fragrant.
5. Pour in the dry white wine, and let it simmer for a couple of minutes until it reduces slightly.
6. Stir in the smoked paprika, tomato sauce, and fish or seafood stock.
7. Season with salt and freshly ground black pepper to taste.
8. Bring the mixture to a gentle simmer and let it cook for about 10 minutes to allow the flavors to meld together.
9. Add the cleaned mussels to the pot, cover with a lid, and let them steam for about 5-7 minutes, or until the mussels have opened.
10. Discard any mussels that haven’t opened.
11. Stir in the chopped fresh parsley.
12. Serve hot, with some crusty bread on the side if desired.
