Milky Sweet or Papaya Delight is a luscious dessert that marries the tropical essence of ripe papaya with the creamy richness of milk. The recipe begins by carefully peeling a medium ripe papaya and removing its seeds, revealing the tender, juicy flesh. The heart of this dish lies in the milk. Heated initially over medium flame, 500 ml of milk is brought to a gentle boil before reducing the heat to allow the gradual incorporation of 200 g of sugar. This slow sweetening process ensures the sugar dissolves completely, creating a sweet base for the addition of the papaya puree. Continuously stirred, the puree and milk amalgamate seamlessly, preventing any unwanted lumps and creating a uniform, velvety consistency.

A touch of aromatic cardamom powder, precisely 1/2 teaspoon, is introduced next, infusing the mixture with its exotic, warm fragrance. For those inclined towards a bit of crunch, a tablespoon of chopped nuts can be mixed in, providing a delightful contrast in textures. Ingredients

1 medium ripe papaya
500 ml milk
200 g sugar
1/2 tsp cardamom powder

Directions

1. Peel the medium ripe papaya and remove the seeds.
2. Cut the papaya into small cubes.
3. In a blender, blend the papaya cubes until smooth.
4. In a saucepan, heat the 500 ml of milk over medium heat until it starts to boil.
5. Reduce the heat to low and add the 200 g of sugar to the milk, stirring constantly until the sugar dissolves.
6. Gradually add the papaya puree to the milk, stirring continuously to prevent lumps.
7. Cook the mixture on low heat for about 10 minutes, stirring occasionally.
8. Add the 1/2 teaspoon of cardamom powder to the mixture and stir well.
9. If using, add the 1 tablespoon of chopped nuts and mix thoroughly.
10. Continue to cook for another 5 minutes, allowing the flavors to combine.
11. Remove from heat and let it cool to room temperature.
12. Refrigerate the papaya milk mixture for at least 2 hours before serving.
