Mexican Tamarind Sauce: homemade recipe

Ingredients

1 cup tamarind pulp
2 cups water
1/2 cup brown sugar
1 tbsp soy sauce
1 clove garlic, minced
1/2 tsp ground ginger
1/4 tsp ground cayenne pepper
1/4 tsp ground black pepper
1/4 tsp salt

Directions

1. Combine tamarind pulp and water in a pot. Let it sit for about 30 minutes to soften the pulp.
2. Heat the pot on medium heat until the mixture begins to boil. Reduce heat to low and simmer for 15 minutes, stirring occasionally.
3. Strain the mixture through a fine mesh sieve into a bowl, pressing on the solids to extract as much liquid as possible. Discard the solids.
4. Return the strained liquid to the pot. Add brown sugar, soy sauce, minced garlic, ground ginger, ground cayenne pepper, ground black pepper, and salt.
5. Simmer the mixture over medium heat, stirring occasionally, until the sauce thickens, about 10-15 minutes.
6. Remove from heat and let the sauce cool slightly.
7. Transfer the sauce to a clean, airtight container. Refrigerate until ready to use.
