Ingredients
1 cup lentils
2 cups water
1/2 cup bread crumbs
1/2 cup finely chopped onion
1/4 cup grated carrot
1/4 cup finely chopped celery
2 cloves garlic, minced
1 tbsp soy sauce
1 tbsp olive oil
1 tsp cumin
1 tsp paprika
1/2 tsp salt
1/4 tsp pepper
1/2 cup flour (optional, for binding if needed)
Directions
1. Rinse 1 cup of lentils under cold water.
2. In a pot, bring 2 cups of water to a boil. Add the rinsed lentils.
3. Reduce the heat and simmer the lentils for about 20-25 minutes, or until they are tender. Drain any excess water.
4. In a mixing bowl, combine the cooked lentils, 1/2 cup bread crumbs, 1/2 cup finely chopped onion, 1/4 cup grated carrot, 1/4 cup finely chopped celery, and 2 minced garlic cloves.
5. Add 1 tablespoon soy sauce, 1 tablespoon olive oil, 1 teaspoon cumin, 1 teaspoon paprika, 1/2 teaspoon salt, and 1/4 teaspoon pepper to the bowl.
6. Mash the mixture with a fork or potato masher until it starts to come together. If the mixture is too wet, add up to 1/2 cup of flour as needed for binding.
7. Form the mixture into patties using your hands.
8. Heat a non-stick skillet over medium heat and add a little oil to coat the bottom.
9. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through.
10. Serve the lentil burgers hot, in a bun with your favorite toppings.
