Ingredients
1.5 lbs lamb shoulder, cut into 1-inch cubes
3 tbsp olive oil
2 cloves garlic, minced
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
0.5 tsp ground cinnamon
0.5 tsp ground turmeric
0.5 tsp ground black pepper
1 tsp salt
2 tbsp lemon juice
2 tbsp fresh parsley, chopped
Directions
1. In a large bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, ground cinnamon, ground turmeric, ground black pepper, salt, and lemon juice. Mix well.
2. Add the lamb shoulder cubes to the bowl, ensuring that all the pieces are evenly coated with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, but preferably overnight.
3. Preheat your grill to medium-high heat.
4. Thread the marinated lamb cubes onto skewers, leaving a bit of space between each piece to ensure even cooking.
5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned on the outside and cooked to your desired level of doneness.
6. Once cooked, remove the skewers from the grill and let them rest for a few minutes.
7. Sprinkle the freshly chopped parsley over the skewers before serving.
