KFC Chicken: homemade recipe

Ingredients

2 cups all-purpose flour
2/3 tbsp salt
1/2 tbsp thyme
1/2 tbsp basil
1/3 tbsp oregano
1 tbsp celery salt
1 tbsp black pepper
1 tbsp dried mustard
4 tbsp paprika
2 tbsp garlic salt
1 tbsp ground ginger
3 tbsp white pepper
1 cup buttermilk
1 egg
1 whole chicken, cut into pieces
Peanut oil or canola oil for frying

Directions

1. In a large bowl, combine 2 cups all-purpose flour, 2/3 tablespoon salt, 1/2 tablespoon thyme, 1/2 tablespoon basil, 1/3 tablespoon oregano, 1 tablespoon celery salt, 1 tablespoon black pepper, 1 tablespoon dried mustard, 4 tablespoons paprika, 2 tablespoons garlic salt, 1 tablespoon ground ginger, and 3 tablespoons white pepper. Mix well.

2. In another bowl, whisk together 1 cup buttermilk and 1 egg until well combined.

3. Dip each piece of chicken into the buttermilk mixture, making sure it’s fully coated.

4. Then dredge the chicken pieces in the flour mixture, pressing firmly so the seasoning sticks.

5. Heat peanut oil or canola oil in a large deep fryer or heavy pot to 350°F (175°C).

6. Fry the chicken in batches, avoiding overcrowding the pot. Cook each piece until golden brown and crispy, about 15-18 minutes, depending on the size of the pieces. Use a meat thermometer to ensure the internal temperature of the chicken reaches 165°F (74°C).

7. Once cooked, place the fried chicken on a wire rack to drain the excess oil.

8. Let the chicken cool slightly before serving.
