Ingredients
1 can (14 oz) of hearts of palm, drained and sliced
1 can (5 oz) of tuna in water, drained
1 cup of cherry tomatoes, halved
1/2 of a red onion, thinly sliced
1/4 cup of fresh parsley, chopped
1/4 cup of kalamata olives, pitted and sliced
1/4 cup of olive oil
2 tbsp of lemon juice
Salt and pepper to taste
Directions
1. In a large bowl, combine the hearts of palm, tuna, cherry tomatoes, red onion, parsley, and kalamata olives.
2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
3. Pour the dressing over the salad ingredients, tossing gently to coat everything evenly.
4. Adjust seasoning with more salt and pepper if needed.
5. Let the salad sit for about 10 minutes to allow the flavors to meld.
6. Serve immediately or refrigerate until ready to serve.
