Green Olive Sauce for meats: homemade recipe

Ingredients

1 cup green olives, pitted and chopped
1/4 cup olive oil
2 tbsp capers, drained and rinsed
2 cloves garlic, minced
1 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp Dijon mustard
1/4 tsp red pepper flakes
1 tbsp fresh parsley, finely chopped
Salt and pepper, to taste

Directions

1. In a medium bowl, combine the chopped green olives, capers, garlic, lemon juice, lemon zest, Dijon mustard, and red pepper flakes.

2. Pour in the olive oil and mix well until all the ingredients are thoroughly combined.

3. Add the finely chopped fresh parsley to the mixture and stir to incorporate.

4. Season with salt and pepper to taste, adjusting as needed.

5. Let the sauce sit for at least 15 minutes before serving to allow the flavors to meld together.

6. Serve over your choice of meats.
