Ginger Jam: homemade recipe

Ingredients

2 cups fresh ginger, peeled and finely chopped
2 cups water
4 cups granulated sugar
1/2 cup lemon juice, freshly squeezed
1/4 tsp salt

Directions

1. Combine the finely chopped ginger and water in a large pot.
2. Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes until the ginger is tender.
3. Add the granulated sugar, freshly squeezed lemon juice, and salt to the pot.
4. Stir well to combine, and increase the heat to medium-high to bring the mixture to a boil again.
5. Once it reaches a boil, reduce the heat to low and let it simmer, stirring occasionally, for about 30-35 minutes until the mixture thickens to a jam-like consistency.
6. Remove the pot from the heat and let the ginger jam cool slightly.
7. Transfer the jam into sterilized jars, seal tightly, and store in the refrigerator.
