Ingredients
1 cup water
1 cup granulated sugar
1/4 cup fresh ginger, thinly sliced
1/4 cup fresh lemon juice
1 tbsp lemon zest
Directions
1. Start by combining the water and granulated sugar in a medium saucepan.
2. Heat the mixture over medium heat, stirring occasionally until the sugar completely dissolves.
3. Once the sugar has dissolved, add the thinly sliced fresh ginger to the saucepan.
4. Bring the mixture to a gentle simmer and let it cook for about 10 minutes, allowing the ginger to infuse.
5. Remove the saucepan from the heat and let it cool slightly.
6. Add the fresh lemon juice and lemon zest to the mixture, stirring well to combine.
7. Strain the syrup through a fine-mesh sieve into a clean container to remove the ginger slices and any zest bits.
8. Let the syrup cool to room temperature before using or storing it in the refrigerator.
