Focaccia: homemade recipe

Ingredients

500g all-purpose flour
325ml warm water
2 tsp salt
7g active dry yeast
2 tbsp olive oil
1 tbsp sugar
1 tbsp fresh rosemary, chopped
Coarse sea salt for sprinkling
Additional olive oil for drizzling

Directions

1. In a bowl, combine the warm water and sugar. Sprinkle the yeast over the top, stir gently, and let it sit for about 5-10 minutes until it becomes frothy.

2. In a large mixing bowl, combine the all-purpose flour and 2 teaspoons of salt. Make a well in the center and pour in the yeast mixture and 2 tablespoons of olive oil.

3. Mix the ingredients together until a dough forms. Turn the dough out onto a floured surface and knead it for about 10 minutes until smooth and elastic.

4. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

5. Preheat your oven to 220°C (428°F). Punch down the dough and turn it onto a lightly floured surface again. Knead it briefly and then shape it into a rough oval or rectangle.

6. Place the dough on a baking sheet lined with parchment paper. Using your fingertips, press indentations all over the surface of the dough.

7. Drizzle the top with additional olive oil, ensuring it gets into all the indentations. Sprinkle the chopped fresh rosemary and coarse sea salt evenly over the dough.

8. Bake the focaccia in the preheated oven for about 20-25 minutes or until it’s golden brown on top and cooked through.

9. Allow it to cool slightly before slicing and serving.
