Ingredients
2 bulbs fennel, thinly sliced
1/4 cup olive oil
1/4 cup lemon juice
1/2 tsp salt
1/4 tsp black pepper
1/4 cup shaved Parmesan cheese
1/4 cup toasted pine nuts
1 tbsp chopped fresh parsley
Directions
1. Thinly slice the fennel bulbs and place them in a large mixing bowl.
2. In a small bowl, combine the olive oil, lemon juice, salt, and black pepper. Whisk together until well combined.
3. Pour the dressing over the sliced fennel and toss to coat evenly.
4. Add the shaved Parmesan cheese and toasted pine nuts to the bowl.
5. Gently toss the salad again to mix the ingredients thoroughly.
6. Sprinkle the chopped fresh parsley on top.
7. Serve immediately.
