Ingredients
1/2 cup white wine
1/2 cup white wine vinegar
1/4 cup water
1 cup mustard seeds
1/2 tsp salt
2 tbsp honey
Directions
1. In a small pot, combine 1/2 cup white wine, 1/2 cup white wine vinegar, and 1/4 cup water.
2. Bring the mixture to a boil over medium heat.
3. Remove the pot from heat and let the liquid cool to room temperature.
4. Place 1 cup mustard seeds in a mixing bowl.
5. Pour the cooled liquid over the mustard seeds.
6. Cover the bowl with plastic wrap and let it sit at room temperature for at least 24 hours, allowing the seeds to soften and absorb the liquid.
7. Transfer the soaked mustard seeds and any remaining liquid to a blender or food processor.
8. Add 1/2 teaspoon salt and 2 tablespoons honey to the blender.
9. Blend the mixture until you reach your desired consistency. For a smoother mustard, blend longer. For a coarser texture, blend less.
10. Transfer the mustard to a jar and refrigerate.
