Cod in Casserole: homemade recipe

Ingredients

1 lb cod fillets
1 cup diced tomatoes
1 cup sliced onions
1 cup sliced bell peppers
1 cup cubed potatoes
2 cloves garlic, minced
1/2 cup white wine
1/4 cup olive oil
1/4 tsp black pepper
1/2 tsp salt
1/2 tsp paprika
1/4 cup chopped parsley

Directions

1. Preheat your oven to 375°F (190°C).

2. Rinse the cod fillets under cold water and pat them dry. Set them aside.

3. In a large baking dish, drizzle half of the olive oil to coat the bottom.

4. Add the potatoes to the dish, spreading them out evenly.

5. Layer the sliced onions, bell peppers, and diced tomatoes over the potatoes.

6. Sprinkle the minced garlic evenly over the vegetables.

7. Season everything with salt, black pepper, and paprika.

8. Pour the white wine and the remaining olive oil evenly over the mixture.

9. Place the cod fillets on top of the vegetables.

10. Cover the baking dish with aluminum foil.

11. Bake in the preheated oven for 30-40 minutes, or until the cod is cooked through and the potatoes are tender.

12. Remove the foil and bake for an additional 10 minutes to allow the top to brown slightly.

13. Remove from the oven, sprinkle with chopped parsley, and serve hot.
