Ingredients
5 cups fresh or frozen corn kernels
1/4 cup cornmeal
1/4 cup milk
2 tbsp butter
1 tbsp sugar
1 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
4 large eggs
1/2 cup grated cheese (optional)
Directions
1. Preheat your oven to 375°F (190°C).
2. Grease a baking dish with butter or non-stick cooking spray.
3. In a large bowl, combine the corn kernels, cornmeal, and milk. Mix well.
4. Melt the butter in a small saucepan over medium heat. Once melted, add it to the corn mixture.
5. Add the sugar, salt, black pepper, and paprika to the mixture. Stir until all the ingredients are well combined.
6. In a separate bowl, beat the eggs until frothy. Then, fold them into the corn mixture.
7. If using, fold in the grated cheese until evenly distributed.
8. Pour the mixture into the prepared baking dish.
9. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
10. Allow the corn cake to cool slightly before serving.
