Ingredients
1 lb chicken breast, diced
2 tbsp olive oil
1 tbsp lemon juice
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp ground cumin
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 red onion, cut into chunks
Wooden or metal skewers
Directions
1. In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, smoked paprika, ground cumin, dried oregano, salt, and black pepper.
2. Add the diced chicken breast to the bowl and mix well to ensure all pieces are evenly coated with the marinade. Cover and refrigerate for at least 30 minutes to let the flavors meld.
3. Soak the wooden skewers in water for about 10 minutes if using wooden skewers. Skip this step if using metal skewers.
4. Thread the marinated chicken pieces onto the skewers, alternating with chunks of red bell pepper, green bell pepper, and red onion.
5. Preheat your grill or grill pan over medium-high heat.
6. Place the skewers on the preheated grill.
7. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and the vegetables are tender.
8. Remove the skewers from the grill and let them rest for a few minutes before serving.
