Ingredients
3 tbsp chia seeds
1 cup almond milk (or any other milk of your choice)
1/2 cup plain Greek yogurt
1 tbsp honey (optional)
1/2 tsp vanilla extract
Fresh fruits, nuts, or granola for topping (optional)
Directions
1. In a mixing bowl, combine 3 tablespoons of chia seeds and 1 cup of almond milk.
2. Stir well to ensure the chia seeds are evenly distributed.
3. Add 1/2 teaspoon of vanilla extract and 1 tablespoon of honey if using. Mix again.
4. Cover the bowl and refrigerate for at least 2 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
5. After the chia pudding has thickened, give it a good stir to break up any clumps.
6. In serving glasses or bowls, layer the chia pudding with 1/2 cup of plain Greek yogurt.
7. Top with fresh fruits, nuts, or granola as desired.
8. Serve and enjoy!
