Ingredients
2 chayotes, peeled, cored, and cut into cubes
1/2 red onion, thinly sliced
1/2 cup cherry tomatoes, halved
1/4 cup fresh cilantro, chopped
1 lime, juiced
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 avocado, diced (optional)
Directions
1. Fill a medium pot with water and bring to a boil over high heat.
2. Add the cubed chayotes to the boiling water and cook for about 10 minutes, or until they are tender but still firm.
3. Drain the chayotes and rinse them under cold water to stop the cooking process. Set aside to cool completely.
4. In a large bowl, combine the cooled chayotes, sliced red onion, cherry tomatoes, and chopped cilantro.
5. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper until well blended.
6. Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
7. If using, gently fold in the diced avocado.
8. Serve the salad immediately, or refrigerate for up to an hour to let the flavors meld.
