Ingredients
2 large eggs
1/4 cup fresh spinach, chopped
2 tbsp fresh basil, chopped
1/4 cup shredded mozzarella cheese
1 tbsp milk
1 tbsp butter
Salt to taste
Black pepper to taste
Directions
1. In a small bowl, crack open the 2 large eggs and add 1 tablespoon of milk. Whisk until well combined.
2. Add salt and black pepper to taste, and whisk again until evenly mixed.
3. Add the chopped fresh spinach and basil into the egg mixture, stirring gently to incorporate.
4. Heat 1 tablespoon of butter in a non-stick skillet over medium heat.
5. Once the butter is melted and sizzling, pour the egg mixture into the skillet.
6. Let the omelet cook for about 2-3 minutes, until the edges start to set.
7. Sprinkle the shredded mozzarella cheese evenly over one half of the omelet.
8. Use a spatula to carefully fold the other half of the omelet over the cheese-covered portion.
9. Cook for another 1-2 minutes, or until the cheese is melted and the omelet is cooked through.
10. Slide the omelet onto a plate and serve immediately.
