2 medium zucchini
1 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 tsp dried basil
1 tsp dried oregano
Directions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Slice the zucchini into 1/4-inch thick rounds.
3. In a large bowl, toss the zucchini slices with olive oil, salt, black pepper, and garlic powder until evenly coated.
4. In a separate bowl, mix together the grated Parmesan cheese, breadcrumbs, dried basil, and dried oregano.
5. Dip each zucchini slice into the Parmesan mixture, pressing lightly to adhere the coating.
6. Arrange the coated zucchini slices in a single layer on the prepared baking sheet.
7. Bake in the preheated oven for 20-25 minutes, or until the zucchini is golden brown and crispy.
8. Allow the zucchini to cool slightly before serving.
