Ingredients
2 whole sea bass (about 1.5 lbs each), cleaned and scaled
4 tbsp olive oil
1 lemon, thinly sliced
4 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/4 tsp cayenne pepper (optional)
2 tbsp fresh parsley, chopped
2 sprigs fresh thyme
2 sprigs fresh rosemary
1/2 cup cherry tomatoes, halved (optional)
1 small red onion, thinly sliced (optional)
Directions
1. Preheat your oven to 375°F (190°C).
2. Rinse the sea bass under cold water and pat them dry with paper towels. Place them on a baking sheet lined with parchment paper or lightly greased with olive oil.
3. In a small bowl, mix together the olive oil, minced garlic, salt, black pepper, paprika, and cayenne pepper (if using).
4. Rub the mixture all over the outside and inside of the sea bass, making sure they’re well-coated.
5. Stuff the inside of each fish with lemon slices, a sprig of thyme, and a sprig of rosemary.
6. Arrange additional lemon slices on top of and around the fish on the baking sheet.
7. If using, scatter the halved cherry tomatoes and sliced red onion around the fish for added flavor and color.
8. Roast in the preheated oven for about 25-30 minutes or until the fish flakes easily with a fork.
9. Remove from the oven and sprinkle with fresh parsley.
10. Serve immediately and enjoy your baked sea bass.
