Ingredients
1 boneless pork loin (approximately 4 lbs)
1 can or bottle of beer (12 oz)
1/4 cup olive oil
4 cloves garlic, minced
1 tbsp dried thyme
1 tbsp dried rosemary
1 tbsp dried sage
2 tsps salt
1 tsp black pepper
1 large onion, sliced
2 carrots, peeled and cut into chunks
2 celery stalks, cut into chunks
Directions
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix together the minced garlic, dried thyme, dried rosemary, dried sage, salt, and black pepper.
3. Rub the pork loin with the olive oil, then evenly coat it with the garlic and herb mixture.
4. In a large roasting pan, place the sliced onion, carrot chunks, and celery chunks.
5. Position the seasoned pork loin on top of the vegetables in the roasting pan.
6. Pour the beer over the pork loin and vegetables.
7. Cover the roasting pan with aluminum foil.
8. Roast in the preheated oven for about 1.5 hours.
9. Remove the foil and continue roasting for an additional 30 minutes or until the internal temperature of the pork loin reaches 145°F (63°C).
10. Once done, let the pork loin rest for about 10 minutes before slicing and serving.
