Ingredients
4 cod fillets (approximately 6 ounces each)
3 tbsp olive oil
2 tbsp lemon juice
3 cloves garlic, minced
1 tsp paprika
1 tsp dried thyme
1 tsp dried parsley
1/2 tsp salt
1/4 tsp black pepper
1/4 cup grated Parmesan cheese
2 tbsp breadcrumbs
Lemon wedges (for serving)
Fresh parsley (for garnish)
Directions
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix together the olive oil, lemon juice, minced garlic, paprika, dried thyme, dried parsley, salt, and black pepper.
3. Place the cod fillets in a baking dish. Pour the olive oil and lemon juice mixture over the fillets, making sure to coat them evenly on all sides.
4. In another small bowl, combine the grated Parmesan cheese and breadcrumbs.
5. Sprinkle the Parmesan and breadcrumb mixture evenly over the top of the cod fillets.
6. Bake the cod in the preheated oven for about 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
7. Remove the dish from the oven and let the cod rest for a couple of minutes.
8. Serve the baked cod fillets with lemon wedges on the side and garnish with fresh parsley.
