Ingredients
1 cup almond flour
1 cup granulated sugar
4 large eggs
1/2 cup unsalted butter, melted
1 tsp vanilla extract
1/2 tsp almond extract
1/2 tsp baking powder
1/4 tsp salt
1/4 cup sliced almonds (optional for topping)
Powdered sugar (for dusting, optional)
Directions
1. Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
2. In a medium bowl, whisk together almond flour, baking powder, and salt. Set aside.
3. In a large bowl, beat the eggs and granulated sugar together until the mixture is light and fluffy.
4. Add the melted butter, vanilla extract, and almond extract to the egg mixture. Mix until well combined.
5. Gradually add the dry ingredients to the wet ingredients, folding gently until just combined.
6. Pour the batter into the prepared cake pan, spreading it out evenly.
7. Optional: Sprinkle the sliced almonds evenly over the top of the batter.
8. Bake for about 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
9. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
10. Optional: Dust the cooled cake with powdered sugar before serving.
