Aguachile: homemade recipe

Ingredients

1 lb (450g) raw shrimp, peeled and deveined
1/2 cup fresh lime juice (about 4-5 limes)
1/4 cup fresh lemon juice (about 2 lemons)
1/4 cup fresh orange juice (about 1 orange)
1/2 cup thinly sliced red onion
1 cucumber, thinly sliced
1-2 jalapeños or serrano peppers, thinly sliced (remove seeds for less heat)
1/4 cup chopped fresh cilantro
1/2 tsp salt (more to taste)
1/4 tsp black pepper (more to taste)
2 cloves garlic, minced
1 avocado, sliced (optional for serving)
Tortilla chips (optional for serving)

Directions

1. Start by preparing the shrimp. Slice the raw shrimp in half lengthwise and place them in a large mixing bowl.

2. Add the fresh lime juice, lemon juice, and orange juice to the bowl with the shrimp. Mix well to ensure the shrimp are fully coated with the citrus juices. Let the shrimp marinate for 10-15 minutes, until they turn opaque and slightly pink.

3. Meanwhile, thinly slice the red onion, cucumber, and jalapeños or serrano peppers. If you prefer less heat, remove the seeds from the peppers.

4. Add the sliced red onion, cucumber, and jalapeños or serrano peppers to the bowl with the marinating shrimp.

5. Stir in the chopped fresh cilantro, minced garlic, salt, and black pepper. Mix everything together until well combined.

6. Taste the aguachile and adjust the seasoning with more salt and pepper if needed.

7. Allow the mixture to marinate in the refrigerator for at least 15-20 minutes before serving, so the flavors can meld together.

8. To serve, transfer the aguachile to a serving dish. Optionally, top with sliced avocado and serve with tortilla chips on the side.
